Two Sisters Inn's Butterfly Pears

Description: The presentation of this pear dish is key to its success. Pansies are plentiful for most of the year and add that special magic to this recipe. Ingredients: 4 firm pears, peeled, halved, and cored (1 or 2 large cans of pear halves may be used if fresh pears are unavailable) 1/4 cup sugar 1/4 cup light molasses 1/4 cup fresh lemon juice dash salt 1/2 teaspoon cinnamon 4 whole cloves Garnishes 1/2 cup Cinnamon Cream 4 pansy flowers 4 large mint leaves 8 blueberries Cinnamon Cream: 1/2 cup light sour cream 3 tablespoons extra-fine sugar 1/2 teaspoon cinnamon Directions: Measure 1 cup of water and place in a saucepan with the sugar and molasses. (If using canned pears, drain juice from pears into saucepan and proceed with recipe.) Bring to a boil and simmer for 10–15 minutes until slightly syrupy. Add lemon juice, salt, cinnamon, cloves, and pear halves. Simmer gently for 5 minutes. Pour contents into a covered container and refrigerate overnight. Just before serving, place 2 pear halves, stem side touching, at a 120 degree angle on a small plate. Spoon an elongated dollop of the Cinnamon Sour Cream between the 2 halves, forming the body of the butterfly. Insert a single pansy petal into the sour cream on each side of the body below each pear half, at an angle forming a mirror image to the pears creating the wings of the butterfly. Split a large mint leaf in half along the spine; place each half on the top of the sour cream body, and then a blueberry on the tip of each mint leaf half forming the antennae. Prepare remaining plates the same.
