Cheddar Shorties
Description:
These little bite size morsels add a zip to any party. Their zesty taste will keep them coming back for more! Ingredients: 1/2 cup butter, softened 2 cups smoked Cheddar cheese, shredded 1/2 cup walnuts, finely chopped 1/4 teaspoon cayenne pepper 1/4 teaspoon salt 4 egg yolks 2 cups flour 1 egg white 1/4 cup walnuts, chopped Directions: Preheat oven to 300 degrees. In a large bowl, beat softened butter with cheese until just blended. Stir in chopped walnuts, cayenne pepper and salt. Blend in egg yolks, 1 at a time. Add 1-3/4 cups flour and stir to form a rough dough. (If dough is too sticky, add more flour a little at a time.) Turn out dough onto counter and with floured hands form dough into two 8-inch logs, 1-1/2 inch in diameter. Brush with 1 beaten egg white, and roll each log in remaining 1/4 cup of chopped walnuts. Wrap logs in wax paper, pressing nuts into dough; chill until firm (about 2 hours in refrigerator or over wrap logs in foil and freeze for up to 2 weeks and thaw when ready to use). Cut into 1/4 -inch thick slices. Bake in top and bottom thirds of oven, rotating pans after 15 minutes. Bake until bottoms are slightly darker than the tops, approximately another 15 minutes. Cool on racks.
