Ayla Combes' Peanut Pad Thai

Ayla, our 10 year old grand daughter, makes this dish for her family. She also is the inn's waitress and sous chef while visitng the inn in the summer. Ingredients: Peanut Sauce 1/4 cup smooth peanut butter 2 tablespoon soy sauce 1 to 2 teaspoon red curry paste, to taste 1 tablespoon peanut oil 1/4 cup rice wine vinegar 1/2 peanuts chopped 1 package of linguini 1/3 cup of fresh chopped cilantro 1 8 ounce package snow peas 1 8 ounce package tofu cubed or 2 chicken breasts seasoned with olive oil and rosemary, grilled, and cubed. Directions: Bring 2 quarts of water to a boil. While you do that, stir together your sauce ingredients. After your water boils drop the linguine in the pot. As it cooks, blanche your snow peas. When your linguini is done cooking , strain the water out and pour pasta back in pot. Stir in your peanut sauce - you can adjust the seasonings to the sauce at this time if you want it spicier) and add blanched peas, chicken or tofu. Sprinkle with chopped cilantro, if desired. Serve immediately.
