Butter Nut Squash Casserole
Description:
This makes squash lovers out of fussy eaters. Serve with Turkey or chicken instead of potatoe or on a buffet for that traditional Thanksgiving dinner. Ingredients: lbs. butternut squash 1/4 cup butter 1/2 cup maple syrup (what to do with all that syrup you bought in Vermont last year) 2 tablespoon of orange marmalade Directions: Peel squash, discard seeds, etc. I usually use a large knife but vegetable peeler will do. Steam squash until tender -, about 45 minutes. Melt butter. Blend all ingredients in electric mixer. Put in 1 quart casserole and bake for about 45-60 minutes at 350' Recipe Summary: Yield: 4 Prep Time: 20 minute Cook Time: 45 minutes to cook squash. 45-60 minutes to bake casserole.
