Baked Egg And Summer Vegetables

This recipe is great in the summer with fresh basil, oregano, zucchini & summer squash right from the garden.

5 eggs
6-8 fresh basil leaves cut into strips
1/2 tsp. oregano minced or fresh to taste
1/2 cup cottage cheese
5 tbsp. grated Parmesan cheese
2 tbsp. olive oil
grape or cherry tomatoes for garnish
1 small zucchini, chopped
1 small summer squash, chopped
salt and pepper to taste

In a medium bowl beat the eggs, basil, oregano with the salt and pepper. Stir in the cottage cheese and half of the Parmesan cheese. In a skillet, saute the zucchini and summer squash in the olive oil just until tender. Add to the egg mixture. Lightly spray individual quiche dishes and divide the mixture between the dishes. Slice tomatoes in half and place 2 or 3 slices on each with a sprinkle of the remaining Parmesan cheese. Bake in at 350 degree oven.
