Blueberry Cinnamon Muffins
Description:
These cake like muffins have plenty of blueberries and are topped with brown sugar. Whenever they are made here at the Inn, there is always a request for the recipe. Ingredients: 1/2 cup butter 1 cup sugar 2 egg yolks 1/3 cup sour cream or plain yogurt 1 1/2 cups sifted flour 1 1/2 tsp. baking powder 1/2 tsp. cinnamon 1/2 tsp. nutmeg 2 cups fresh or frozen blueberries 2 egg whites, stiffly beaten brown sugar Directions: In a medium bowl, cream butter and sugar well. Add egg yolks and sour cream and mix completely. Into a medium bowl, sift flour, baking powder, cinnamon and nutmeg. Set aside 2 tbs. of the dry ingredients to toss with blueberries. Stir dry ingredients into creamed mixture. Wash, drain, pat dry and flour blueberries. Fold into batter. Beat egg whites and gently fold egg into batter. Spoon into paper-lined or greased and floured muffin tins. Sprinkle brown sugar over each muffin. Bake at 375 degrees.
