Baked Eggs With Spinach And Artichokes

1 bag of cleaned spinach
2 shallots chopped
1/4 cup white wine
1/4 cup heavy cream
1/2 cup asagio cheese
6 large eggs
1 large tomato sliced
1 can artichoke hearts quartered
1/2 cup bread crumbs

In large sauce pan saute shallots in a little butter. Add spinach and white wine and cook until spinach is wilted. Add in heavy cream and reduce. Add in half of cheese. Divide between 6 buttered ramekins. Place 4-5 quarters of artichoke on spinach mixture. Crack egg on top. Top with one slice of tomato. Mix bread crumbs with remaining cheese and place on top of tomato. Garnish with 1 quarter of artichoke piece. Bake in oven at 350 until egg is just set and starts to bubble. Approximately 15 minutes.
