Best Baked Oatmeal

Presentation, flavor, texture, and nutrition make this one of the best low fat dishes of the house. It is a delicious hot treat for a cold morning and is easy to prepare - an all-around winner!

2 cups oatmeal (quick or regular)
1 1/2 tsp. baking powder
1/2 tsp. salt
1 cup milk
2 eggs
1/2 cup applesauce
1/2 cup brown sugar
1 tsp. vanilla
1/2 cup dried cranberries

1 cup vanilla yogurt
1 cup fruit-flavored yogurt
two kinds of fresh fruit, like strawberries, peaches, or blueberries for garnish

Preheat oven to 350 degrees.

In a large bowl combine the ingredients as listed and stir well. Refrigerate for 2 hours or overnight. Pour into a greased pie pan and bake about one hour or until done. The center will still be moist when done. Make sure that the center is set and not runny. Cut into 6 or 8 wedges, place on serving plates and top with two kinds of yogurt. Garnish with a few pieces of your choice of fruits. Some yogurt brands have more color and look better when presented. Match the fruit-flavored yogurt with one of the fruits served.
