World's Best Waffles & Butterscotch Sauce

This is absolutely the best sauce recipe I have found. It is also great on ice cream, cakes, and other desserts.

Ingredients:
1 1/2 cups flour
1/2 cup corn starch
1 teaspoon baking powder
1/2 teaspoons baking soda
1 teaspoon salt
2 cups buttermilk
2/3 cup cooking oil
2 eggs
1 tablespoon sugar
1 1/2 teaspoons vanilla
chopped pecans (optional)

BUTTERSCOTCH SAUCE
2 tablespoons butter
3/4 cup brown sugar
3 1/2 tablespoons *clear jel
1 1/2 cups water
3/4 teaspoon vanilla
1/2 teaspoon maple
pinch of salt

Directions:
In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix with the vegetable oil, eggs, sugar, and vanilla and mix well. Let the batter sit for 30 minutes.

Preheat a waffle iron. Do not use any non-stick spray on the waffle iron; the oil in the batter will allow for easy release of the waffles. Follow the directions on your waffle iron to cook the waffles. For pecan waffles, pour 1 cup of batter (Batter amount may vary with waffle iron size) in to waffle iron then sprinkle with a large handful of chopped pecans. Allow to cook until done. Serve immediately. Caramel sauce may be served on the side or on waffle topped with bananas and whipped cream.
BUTTERSCOTCH SAUCE
In a saucepan, brown the butter, then add the brown sugar and 1 cup of water. Simmer for a minute or two. In a seperate bowl, combine 12 cup water and clear jel; then add the clear jel mixture to the saucepan and cook for several minutes until thickened and clear. Cool then add vanilla, maple fla
