Blueberry Butter Cake
Description:
This is a great cake for tea-time or to serve along with an egg or cheese-based breakfast. It's buttery and delicious and you can use well-frozen berries although fresh are best! Ingredients: Cake: 2 3/4 c flour 1 c sugar 1T baking powder 1/2 t baking soda 1/2 t salt 3 eggs, beaten 1 c buttermilk 1 c melted butter 1T pure vanilla extract 3 c fresh blueberries Topping: 1/2 c sugar 1/4 c flour 1/4 c cold butter cut in bits 1/2 t ground cinnamon Directions: Preheat oven to 375. Butter & Flour a 9x13 inch pan. Sift the dry cake ingredients together onto a large sheet of waxed paper. Mix together all wet ingredients except berries. Pour the wet ingredients into the dry ingredients and mix just until blended. Pour the batter into the prepared pan and sprinkle with the blueberries. In a small bowl, with your hands, crumble together topping ingredients. Sprinkle topping over batter. Bake for 50 minutes until knife comes out clean…the cake should be moist, not dry. Cut into rectangles or squares once its cooled. Enjoy!
