Zucchini Brownies
Description:
A great recipe and a wonderful use for zucchini when it is plentiful. These hold for about a week in the refrigerator, covered. The icing is heavenly and the brownies themselves moist and tasty! Ingredients: 4 eggs 1 1/2 c oil (veg) 2 c sugar 2 c flour 2 t baking soda 2 t cinnamon 1 t salt 4T cocoa 1 t vanilla 3 c grated zucchini 1/2 c nuts Icing 3 oz cream cheese 1/2 c butter 2 T cocoa 2 c powdered sugar 1 t vanilla Directions: Beat eggs and mix in oil. Sift together flour and sugar, soda and cinnamon. Turn wet ingredients into dry adding vanilla. Add in zucchini and nuts. Butter and flour a 13x9 inch baking pan. Pour batter into pan. Bake at 350 for 25-30 mins. Cool brownies. I find its best to ice the brownies in the pan and keep them fresh in the refrigerator. Enjoy!
