Pumpkin Pancakes

Light and fluffy pancakes with a hint of pumpkin and spice to welcome Fall.

2 c flour
1 t baking soda
1/2 t salt
2 eggs lightly beaten
2 1/2 c buttermilk
3 T melted butter
1 c pureed pumpkin

Sift flour, baking soda and salt.
In a separate bowl, whisk together eggs, buttermilk, cooled melted butter and pumpkin.
Gradually add the liquid ingredients to the dry. Do not mix too much or the cakes will be tough. Cook on a griddle…hold in oven till they are all cooked.
Plate them while warm with butter, confectioner’s sugar and toasted walnuts.
Serve with honey or pure maple syrup.
