Champagne Cornish/game Hens

Description:
A Grandison guest favorite. The perfect way to finish off that bottle of leftover honeymoon champagne.

Ingredients:
2 Cornish game hens
Salt
1/2 cup melted butter
1/4 cup champagne
Freshly ground pepper
Cooked rice

Directions:
Clean the hens and remove organs. Lightly salt the cavities. Brush both birds with melted butter and lay in a baking pan, breast side up. Pepper as desired. Bake at 450 for ten minutes to brown, and then reduce heat to 350, pour champagne over the hens and return to the oven for 30-45 minutes. Baste every 5 minutes.

Serve the hens whole, or split over a bed of rice.
