Pumpkin Cookies
Description:
When our kids were small we carved pumpkins one Halloween. We had so much pumpkin left over that we searched for any recipie made with pumpkin. This was our favorite. Ingredients: I cup shortening 2 cups brown sugar 3 eggs 1+3/4 cups pumpkin 1/2 cup sour cream 3 cups flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/4 teaspoon ginger 1/2 teaspoon nutmeg 1 cup raisins 1 cup nuts Directions: Cream shortening and sugar, add eggs and blend well. Sift dry ingredients. Add sour cream to pumpkin. Add dry ingredients to creamed mixture alternating with cream and pumpkin. Add raisins and nuts mixing well. Drop by spoon onto greased baking sheets. Bake at 350 for 15-20 minutes. cool and package freezing if you desire.
