Cherry-Rhubarb Delight
Description:
This serves 8-10, although the original recipe said it would serve 15. Everyone wants seconds. We took it to a dinner party with 8 moderate-sized people and there was none left over. Ingredients: Preheat oven to 350. Grease 9 x 13 dish. In a large bowl combine: 1 c. rolled oats 1 c. brown sugar 1 c. flour 1/4 tsp. salt Cut in 1/2 c. butter until crumbly. Pat 2 c. of mixture into the bottom of the pan. Cover mixture in pan with 4 c. cleaned diced rhubarb. Directions: In a saucepan, combine 1. c. sugar and 2 Tbs. cornstarch. Stir in 1 c. cold water. Whisk together, cooking over medium heat, stirring constantly. Cook until mixture is thickened and clear – 2-3 minutes. Stir in 1 tsp. almond extract and 1 can cherry pie filling. Spoon over rhubarb. Combine 1.2 c. finely chopped walnuts with remaining crumbs, sprinkle over cherries. Recipe Summary: Yield: 10 servings Prep Time: 20 minutes Cook Time: Bake 40-45 minutes.
