If you’re a Midwesterner afraid to cook with fish, like I was, start with this recipe. It’s amazingly tasty and easy, despite a lot of ingredients. Capers are found near olives in the grocery store. Ingredients: Fold 4 6 oz. tilapia fillets into circles and secure with a toothpick. Please in an 8x8 oiled dish. In a large skillet, heat 1 T. olive oil. Add 1/2 c. chopped onion, sauté until transparent. Add 1 tsp. cumin 2-3 cloves garlic minced. Add 3 Tbs. orange juice, 1 Tbs. lime juice, 2 Tbs. tomato paste 1 (10 oz.) can hot (mild if you prefer) diced tomatoes with green chilies, 4 Tbs. chopped fresh cilantro, 2 Tbs. capers, 4 Tbs. chopped pitted green olives. Directions: Bring to a boil, reduce heat and simmer 3 minutes or until slightly thickened. Pour over fish. Bake 15-20 minutes or until fish flakes. Serve with brown and wild rice to absorb the tomato sauce.
