Cranberry Pie

Description:
Don't let the name scare you. I call this yummy coffee cake/pastry, Cranberry Pie because I make it in a pie plate. This is a favorite here at Second Wind and it's my favorite too, for the simple reason it's so simple. Guests always ask for this recipe

Ingredients:
1 cup flour (Sometimes I even sneak a little freshly group ww flour in that cup, appox. 1/4 cup)
1 cup sugar
1/4 tsp. salt
2 cups fresh or frozen cranberries(thinly sliced)
1/2 cup chopped walnuts
1/2 cup butter
2 eggs (beaten)

Topping
2 Tablespoons chopped walnuts
1 Tablespoon sugar

Directions:
In bowl combine flour, sugar and salt. Cream in softened butter and eggs. Stir in nuts. Lastly fold in sliced cranberries. I slice them before I freeze them (with Salad Shooter) and add them just slightly defosted so my batter doesn't turn pink. Spread into a greased 9 inch pie tin. Sprinkle with walnuts and sugar. Bake at 350 degrees for 50 minutes or until tooth pick comes out clean. Serve with whipping cream.
