Deep Dark Devils Food Cake

I usually make this cake for teatime as a bundt cake and serve it with a chocolate sauce made of melted bittersweet chocolate and butter. It also makes a great layer cake. One variation is to add chopped prunes to the batter.

1 cup boiling water
1/2 cup buttermilk
1 tbs. vanilla extract
1 tbs. organic chocolate flavoring
1 tbs. organic coffee flavoring
2 sticks unsalted butter, melted
2 cups light brown sugar
4 large eggs
2 cups flour
3/4 cup Dutch (Droste’s or Van Houten) cocoa
1 1/4 tsp baking soda
1/2 tsp salt

Beat butter and sugar together, add eggs beating after each addition. Add vanilla, chocolate flavor, coffee flavor, beat.

Mix together sugar, flour, baking soda, salt, cocoa,
Beat water and buttermilk into egg mixture. Beat in flour mixture.

Turn into greased and floured baking pan. Bake: Glass bundt pan - 325 F. for about 45 minutes. Should spring back when pressed with a fingertip, or 3, 9” cake pans - 350 F for 20-25 minutes
