Pignoli Cantucci (biscotti)
Description:
These are sliced and browned cookies that we call biscotti and Italians call cantucci. You can make them in any flavor, with any nuts, or any dried small fruits like dried cherries, or golden raisins. They can also be dipped in melted chocolate Ingredients: 90 grams pignoli 100g unsalted butter 150 grams sugar 2 eggs 2 Tbs. lemon juice grated zest of one lemon 300 grams flour 1 1/2 tsp. baking powder pinch salt Directions: Beat butter and sugar together. Beat in eggs, one at a time. Beat in lemon juice and zest. Combine flour, salt and baking powder. Beat into butter mixture. Mix in pignoli. Divide dough into halves and pat into two flat loaves. Bake on parchment lined cookie sheet for 25 minutes at 325 F. Slice loaves into 1/2 " slices and bake for 10 minutes on each side. Cool on wire rack. Recipe Summary: Yield: 2 doz.
