Green Chiles/Egg Bake

Green Chiles/Egg Bake is a flavorful breakfast or brunch entree. Serve it along with your favorite breakfast meat and maybe add a salad or sliced tomatos for brunch.

8 oz. cheese—we generally use Monterey Jack or Pepper Jack but one could also use a mix of white cheeses including white cheddar.
2 cups cottage cheese
1/4 cup flour
1 t. baking powder
1 stick butter
6 eggs beaten
4 - 4.5 oz. can of chopped green chiles—your choice as to amount of heat

Preheat oven to 350 degrees
Melt butter, mix in flour and baking powder
Mix all other ingredients with the flour mixture
Spray a 9 x 13 baking pan with Pam
Pour mixture into 9 x 12 baking pan and bake for 40 minutes or until it is golden brown and set in the center.

Note: This dish should rest 5 – 10 minutes before serving.
