Hollandaise Sauce

Description: Our Eggs Benedict Excellente is a favorite! We dribble our very own heavenly hollandaise sauce over fresh egg, ham, and a toasted English muffin. Ingredients: 4 large eggs yolks 2 teaspoons lemon juice 1/8 teaspoon hot sauce 4 teaspoons water salt freshly ground black pepper 2 sticks unsalted butter, melted Fresh parsley, optional Scallions, optional Directions: Place a stainless steel bowl over a pot of simmering water, being careful to not let the bottom touch the water. In that bowl, whisk together the egg yolks, lemon juice, hot sauce, and water until pale yellow in color. Season with salt and pepper. Remove the bowl from the pot. Whisking vigiriusly, add the melted butter, 1 tablespoon at a time, whisking until all the butter is incorporated. Keep warm until ready to serve over the egg, ham, and toasted English muffin. Sprinkle with fresh parsley and/or scallions if desired.
