Pear & Gorgonzola Tart

Garnish with fresh parsley and serve.

1/2 Cup mild onion, sliced thinly
1 Pear; pealed, cored and sliced 1/4 inch thick
2 oz. Gorgonzola cheese
1 sheet puff pastry, thawed
4 Tablespoons melted butter
1/2 teaspoon fresh sage, chopped
1/2 teaspoon fresh rosemary, chopped

Preheat oven to 400 degrees.

Place a teaspoon of oil in a non-stick skillet; add sliced onions and caramelize over med-low heat. Set skillet aside.

Lay puff pastry sheet on work surface and brush lightly with melted butter. Sprinkle with fresh herbs and caramelized onions. Cut pastry into 4 even pieces. Arrange pear slices evenly on each piece.

Bake in oven until pastry is light brown and tart is cooked through (approximately 20 minutes). Remove from oven and sprinkle with gorgonzola. Continue baking until cheese is completely melted (approximately 5 minutes more).
