Salami And Eggs

This is a recipe I got years ago from a Rachel Ray program. Feel free to mix things up a bit like I do. Ingredients: 1 - 1/4 inch slice of salami, cut into bite size pieces 1 small clove garlic, chopped 2 scallions, chopped 1 jumbo size eggs, beaten 2-3 T. garden vegetable soft cream cheese 3 T. chopped tomato Salt & Pepper to taste Directions: Heat s small skillet over medium heat. Add a drizzle of oil or butter and saute salami until it darkens in color. Add garlic and scallions, stir for about one minute. Add eggs and cheese and season with salt & pepper. Cook until soft and creamy, stirring the egg mixture. Add tomatoes at the last minute. Garnish with chopped parsley or chives.
