Zucchini Egg Puff

1 c. sliced zucchini
1/3 c. chopped onions
2 T. butter
1 - 8oz carton soft cream cheese with chive & onion, softened
1/4 c. milk, room temp.
6 eggs, slightly beaten
2 c. frozen has brown potatoes, thawed and drained
1 1/2 tsp. salt
1/4 tsp. pepper
1 c. shredded Colby/Monterey Jack cheese

Saute zucchini and onions in butter in a 10-in. ovenproof skillet until tender. In a mixer, blend together the cream cheese and milk. Add eggs, potatoes and seasonings. Pour over zucchini, Do not mix. Bake for 30 minutes at 350. Remove from oven and immediately top with shredded cheese. Let stand 5 minutes before cutting.
