Salmon Cheese Ball

A wonderful appetizer for parties, tailgating or a romantic evening.

1 lb fresh smoked salmon or canned smoked salmon
1 pkg 8 oz cream cheese
1 Tbs. lemon juice
t tsp grated onion
1/4 tsp salt
1 Tbs horseradish
1/4 tsp liquid smoke (only if using fresh or unsmoked salmon)
1/2 cup chopped pecans
3 Tbs. finely chopped parsley

Mix all ingredients together with the exception of pecans and parsley. Chill for 30 minutes. While the mixture is chilling, combine the pecans and parsley in a cereal or serving bowl. When the cheese mixture is thoroughly chilled remove from the refrigeator and form into a ball. Roll the ball in the pecan and parsley mixture until thoroughly covered.
