Tex-mex Breakfast Casserole
Description:
This is one of our signature dishes and is always served on Saturday morning. Repeat guests always want to make sure we are serving it on their visit. Ingredients: 1 lb. Ground Sausage 1/2 bag O'Brien Frozen Hashbrowns 1/2 med. Onion 2 tsp. Chile Powder 1/2 tsp. Garlic Powder 1/2 tsp. Salt 1/2 tsp. Pepper 8 Jumbo Eggs 1/2 stick real butter 4 c. Grated Cheddar Cheese Directions: Melt butter in pan. Whip 4 eggs then scramble and set aside. Whip remaining eggs and set aside. Fry sausage and potatoes until all sausage is cooked. Remove from heat to a large heat proof bowl. Stir in seasonings, scrambled eggs, the remaining 4 raw eggs, and 2 cups of cheese. Combine well and place in a oven proof casserole dish. Cover with foil and put in the fridg overnight. It must set overnight! Prior to baking, remove dish from fridge and let set on counter for 15 minutes. Preheat oven to 350. Top with remaining 2 c. cheese, cover with foil and bake at 350. Remove foil 40 minutes into baking time.
