Wine Poached Pears
Description:
This is a make ahead dish, and you can use the whole pear or serve half pears. If you use the whole pear, you will need a knife and fork to eat it. Ingredients: 8 small pears with stems 3 c. dark red wine 2 c. apple juice or water 1 c. sugar 1 3 inch stick cinnamon 5 whole Coriander 1 Fresh Ginger cut into 2 inch strips Directions: Combine all ingredients except pears into a pot big enough to hold your pears. Peel pears leaving the stems if serving whole, or cut half into and remove stem and centers with a melon baller if serving 1/2 pear. Place pears into liquid and bring to a boil. Reduce heat,cover and cook for 15 more minutes. Remove all spices and allow to cool in pot then remove to container for the fridge. Let set overnight. Before serving return to cooking pot and re-heat for 5 minutes. Place pears in individual serving dishes. Continue to reduce wine liquid until a thin syrup is formed about 5- 10 minutes more. Pour syrup over pears and garnish with mint if desired.
