Very Berry Scones
Description:
"These lovely scones have a texture somewhere between a homemade biscuit and cookie, with just enough sweetness to use as a nice side or to eat alone. Great with apple butter or other jams." Ingredients: 2 cups flour 4 tsp baking powder 3/4 tsp salt ⅓ cup white sugar 1/4 cup brown sugar 4 Tbsp butter 2 Tbsp shortening 3/4-1 cup finely chopped dried berries 3/4 cup cream 1 egg 3-4 tsp any flavor of jelly (optional) Directions: Preheat oven to 375 degrees F. In a large mixing bowl, combine flour, baking powder, salt, and sugars. Mix well. Cut in the butter and shortening. Stir and fluff in the dried berries. In a separate bowl, combine cream, egg, and jelly (if using), mixing well. Fold into dry ingredients and mix just until moistened. Turn dough out onto a floured surface. Pat into a circle and score wedges, or cut into biscuit-size rounds. Bake no longer than 15 minutes! Transfer immediately onto cooling rack, or bake on grid baking sheet to keep bottoms from over-browning.
