Apple And Cinnamon Sugar Pancakes

Description:
A favorite pancake recipe served with authentic maple syrup.

Ingredients:
6 lg. eggs
6 c. buttermilk
1 1/2 c. homemade granola
6 c. buttermilk biscuit mix
1 c. plain yogurt
3 T. honey
1/4 c. unsalted butter (melted)
1 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
3 small apples cored and peeled, sliced into rings

Directions:
In a mixing bowl, beat together all ingredients except biscuit mix and apples. Gently stir in baking mix until you have a thick batter than is not runny and plops from spoon in large blobs. Preheat griddle to 400 degrees. Spray with non-stick spray before each batch. Ladle 1 1/2 ounces of batter onto griddle. Place apple rings in center of pancake and sprinkle cinnamon sugar mixture over pancake. Cook until bubbles form on surface, flip and cook briefly on other side. Serve with maple syrup (Grade A medium amber is best). Note: You may use any type apple, except something super tart like a Granny Smith.
