Baked Grits With Cheese And Salsa

Perfect side dish to be served along with your favorite fish or at breakfast with eggs.

1 1/2 c. quick grits
1 1/2 c. half and half
1 quart water
3/4 teaspoon salt
2 c. grated cheddar cheese
1 T. Parmesan cheese, shredded
1/2 teaspoon onion powder
1/2 c. salsa
2 eggs, beaten

Combine water and half and half in large non-stick pot, bring to a boil. Add grits slowly and cook whisking constantly until thick. Stir in cheese, salsa, seasonings and beaten eggs. Pour into greased 3 quart baking dish. Sprinkle top with more cheese if desired. Bake for 20 - 30 minutes at 350 degrees or until firm, cover if needed to prevent over browning.
