Tomato Basil Soup

A creamy and delicious tomato soup.

4 c. chicken stock
3 whole tomatoes - chopped
1 T. minced garlic
3 T. chopped basil
1 c. heavy cream
1 c. tomato juice
2 T. butter
2 T. flour

Make a roux by melting the butter in a saute pan and add flour, stirring until smooth and you get a peanut butter consistency; set aside. Bring chicken stock to a boil. Add tomatoes and simmer for 10 minutes. Add next 4 ingredients and simmer for an additional 5 minutes. Remove pot from stove and puree soup with a hand blender or traditional blender and return to stove. Add roux to soup stirring constantly and cook until thickened. Add salt and pepper to taste. Strain soup through a fine sieve and serve.
