Baked Finnish Pancake

Description:
Adapted for individual servings. Fills a plate. Traditional method uses a pie pan that is sliced in wedges at the table.

Ingredients:
4 6-inch cast iron frying pans.
4 Tablespoons butter, melt and set aside
2 eggs
1/2 cup milk
1/2 cup flour
A few drops almond flavoring
1/4 tsp. grated lemon rind
Whole fresh blueberries, raspberries or strawberries.

Directions:
Set frying pans on sided cookies sheet. Preheat the pans in the oven while the temperature is reaching 475 degrees F. Five minutes before you want to bake the pancakes take the pans out of the 475 degree oven and set aside. Beat the eggs, add the milk and beat; add the flour and beat; add the almond flavoring and lemon rind and stir. Spray the hot frying pans with cooking spray and put two tablespoons of butter in each frying pan. Pour the pancake batter into each frying pan evenly. Bake 12 to 15 mintues. Pancakes will rise around the edges and fall in the middle. When golden brown remove from the oven. Count to five. Pancake will deflate. Carefully lift with forks each pancake onto plate. Add fresh berries and maybe powdered sugar. Serve with maple syrup.
