Cranberry MuffinsDescription: These were first served at our first B&B on Young's Island in northern Mn. One of the first historic Minnesota B&B's opened in the early 1980's. Substitute orange juice for the milk or applesauce for the oil. Ingredients: 1 egg 3/4 cup milk 1/3 cup oil 1 3/4 cups flour 1/2 cup sugar 2 1/2 teaspoons baking powder Pinch of salt 1 cup cranberries, chopped 12 cup muffin pan Directions: Preheat oven to 400 degrees F Beat egg, milk and oil in small bowl. Stir flour, baking powder, sugar and salt in large bowl. Stir cranberries into the flour mixture. Make a "well" in the middle. Add egg mixture to the well all at once and stir just until ingredients are moistened. Spoon batter in greased or paper lined muffin cups. Bake at 44 degrees for 20 to 25 minutes.
