Cherry Maple Scones
Description:
A delicious scone, a perfect additional to breakfast or afternoon tea. Ingredients: 3.5 cups of unbleached white flour (AP) 1 cup of whole wheat pastry flour 1 cup of whole oats 2 Tbsp. baking powder 2 tsp. salt 1.5 cups of chopped black cherries 1 pound of unsalted butter, cut into 1/2 inch cubes 1/2 cup of cold buttermilk 1/2 cup of pure maple syrup 4 whole eggs, lightly beaten Directions: In kitchen aid mixing bowl combine, flours, oats, baking powder, salt, mix to blend, use the paddle. Slowly add the cold butter one piece at a time, continue to add, let the butter mix into the flour, to a "cornmeal" like texture. It's ok if all the butter is not incorporated. Do not over mix…, add the chopped cherries, mix till blended. In a separate bowl mix buttermilk, maple syrup, eggs. Add this mix to the dry ingredients, mix till just blended. Dough will be sticky. Dust the work surface with whole wheat flour. Roll the dough in the flour to coat lightly. Use the rolling pin, roll out about 1/2 inch thick. Use the 2" cutter, place cut dough on a parchment lined half sheet tray, continue this set till all the dough is used up. Bring to room temperature, bake at 350 for 12 minutes.
