Fresh Mango Salad
Description:
This is a great summer salad and the perfect side for grilled fish and meats. The flavor profiles are that of Thailand with the combination of sweet and spicy.
Ingredients:
1 large, ripe mango, peeled and sliced or diced 1/2 small red onion, very thinly sliced 1/2 Cup washed and roughly chopped cilantro leaves 1 small red Thai chili very finely chopped (de-seed if you like for less spice) 1/4 Cup roughly chopped mint 1 Tablespoon Rice Vinegar 2 Green onions thinly sliced Juice 1/4 of a fresh lime Salt and pepper to taste
Directions:
Simply combine all of the ingredients in a bowl and serve!
