German Apple Cake

Description: When you don't know what to do with all those apples you just picked. Quick and simple! Ingredients: 3 eggs 2 cups sugar 1/2 c. vegetable oil 1/2 tsp vanilla 2 cups flour 1 tsp. baking soda 1/2 tsp salt 2 tsp cinnamon 5 cups thinly sliced Mac apples 1/2 cup chopped walnuts Dried cranberries optional Directions: Pre-heat oven to 350 degrees. In a large bowl beat eggs, sugar, oil and vanilla. Add all at once the flour, soda, salt and cinnamon. Mix to blend. Fold in the apples, walnuts and dried cranberries if desired. Bake in a well-greased bunt or tube pan for approximately 1 hour. A glaze can be made but this cake will not need it.
