Maple Mustard Chicken

Description: We serve this chicken for our murder mystery dinners. I keep trying to change the entree but the guests rave about the chicken, so I keep serving it! Ingredients: 3 tbl olive oil 2 garlic cloves, minced 2 tbl chopped fresh rosemary 2 tbl chopped fresh chives 2 tbl apple cider vinegar 1/3 cup pure maple syrup (no fake stuff) 1/4 cup spicy brown mustard (Guilden's) 6 chicken breast halves Directions: Heat 2 tbl oil in skillet. Add garlic, sauté 30 seconds. Add chopped herbs and vinegar; cook 30 seconds. Pour into bowl; cool. Whisk in syrup and mustard. Place chicken in baking dish or zip lock. Pour marinade over; turn to coat. Sprinkle with salt/pepper. Cover; chill at least 1 hour or overnight. Remove chicken from marinade. Put remaining marinade into saucepan and bring to a boil for a couple of minutes. Sprinkle chicken w/salt/pepper. Grill or sauté 2 minutes per side in 1 tbl olive oil and cook till done! When chicken is just about done, take off the grill or out of skillet. Place on your platter or a baking dish and cover with foil and put in very low oven (maybe while you cook your veggies and starches). This will finish off any cooking and allow the chicken to rest (makes it moist). After the sauce has cooked thoroughly, strain and pour over chicken just before serving.
