Overnight Pea Salad

This is great for bbq's. It is the only dish that goes home with no left overs. Since it serves so many, make sure you make it for a large potluck-type party.

1 head of iceberg lettuce, shredded
1 cup celery, sliced
1 cup green pepper, chopped
1/2 cup onion, sliced
1 package of frozen peas that are thawed under hot water
1 can water chestnuts, sliced
1 1/2 cups mayonnaise
3 tablespoons sugar
1 cup grated Cabot cheddar cheese
1 lb. cooked and crumbled bacon

Place first 6 ingredients in large bowl in layers in order given. Spread the top with 1.5 cups of mayonnaise. Sprinkle 3 tablespoons of sugar over top of the mayonnaise. Sprinkle 1 cup grated cheese over everything. Cover tightly and refrigerate overnight. Before serving, toss with 1 lb. cooked and crumbled bacon. Transfer to decorative bowl.
