Overnight Pea Salad
Description:
This is great for bbq's. It is the only dish that goes home with no left overs. Since it serves so many, make sure you make it for a large potluck-type party. Ingredients: 1 head of iceberg lettuce, shredded 1 cup celery, sliced 1 cup green pepper, chopped 1/2 cup onion, sliced 1 package of frozen peas that are thawed under hot water 1 can water chestnuts, sliced 1 1/2 cups mayonnaise 3 tablespoons sugar 1 cup grated Cabot cheddar cheese 1 lb. cooked and crumbled bacon Directions: Place first 6 ingredients in large bowl in layers in order given. Spread the top with 1.5 cups of mayonnaise. Sprinkle 3 tablespoons of sugar over top of the mayonnaise. Sprinkle 1 cup grated cheese over everything. Cover tightly and refrigerate overnight. Before serving, toss with 1 lb. cooked and crumbled bacon. Transfer to decorative bowl.
