Orange Blossom Waffles

Orange Blossom Waffles with Mangoes and Nutmeg Cream

1 TBSP. mint or basil chopped
2 TBSP. peach schnapps liquor
3/4 c. water
2 c. heavy cream
2 mangoes peeled and sliced
1 TBSP. grated nutmeg
1 1/4 c. sugar
1 tsp. baking powder
1 c. flour
pinch salt
1 c. milk
1 egg
1 oz. peanut oil
1 TBSP. orange blossom water
Maple syrup

Bring 1 c. sugar, water, peach schnapps and mint or basil to boil
Remove from heat and let cool to room temperature
Pour over sliced mangoes and refrigerate
Whip heavy cream, 2 TBSP. sugar and nutmeg until soft peaks form
Refrigerate until ready to use
Preheat waffle iron
Mix flour, baking powder, 2 TBSP. sugar and salt together
In separate bowl, mix milk, eggs, oil and orange blossom water
Whisk wet and dry ingredients together until well blended
Pour enough batter into waffle iron to cover bottom
Should make 3 large waffles

Divide waffles in half and cut each half into 3 wedges
Fan 3 wedges out on half of plate
Fan out 5 6 slices of mangoes on other half of plate
Drizzle maple syrup on waffles
Dollop nutmeg cream into center of each plate
Garnish with mint or basil
