Poached Eggs In A Potato Nest

Ingredients:
5 large eggs - broken into bowl
1 oz. lemon juice or white vinegar
1 tsp. salt
2 qt. water
2 Idaho potatoes - peeled

Directions:
NESTS
Using a mandoline and the zig-zag attachment, slice thin "gaufrettes"
Fry slices immediately in 325 degrees oil for 10 sec. to blanch
Placed blanched potato "gaufrettes" on a pan
Lay slices in a 5" circle over lapping
Lay between silpat baking sheets and pound slightly with back of pan
Place potato circles in a nest fryer basket and fry at 325 degrees until golden brown

EGGS
Boil water in pan
Add lemon and salt to boiling water
Slide eggs from bowl to pan
Cook for 3 minutes
Remove with slotted spoon and serve
Place 1 poached egg in each nest
Serve alone or over sautéed spinach and with choice of side
