Beef Burgundy

Description:
This is one of my favorites! If you have leftovers, put plenty of gravy & some of the beef in a crock, heat, & top with homemade baking powder biscuits flavored with fresh chives and a little bacon to make Beef Burgundy Cobbler with Bacon Chive Biscuits.

Ingredients:
Three 8 oz. top sirloin steaks
2 slices bacon, cut in pieces & browned
1 can cream of mushroom soup
1/2 pkg. dry onion soup mix (may use 1 pkg.)
1 c. red dry burgundy wine
1/2 cup fresh mushrooms, sliced
1/2 tsp. herbs de provence
1/2 c. water + 1/2 c. beef broth with 1 TBS cornstarch

Directions:
Brown steaks in oil. Salt & pepper. Set steaks aside; save drippings in frying pan. Mix other ingredients together, add to pan; bring to a boil. Put steaks in an enamel roaster and pour gravy over all . Cover & bake for 2 hrs. at 325 degrees until steaks are tender and gravy is a rich brown. Serves 3.
Serve with red potatoes. The steaks may also be roasted & then frozen in individual servings (in the gravy) to reheat at your convenience.
