Potato Cheese Soup

Description:
This soup can be adapted in a variety of ways. Omit toppings & add steamed broccoli florets to make Broccoli Cheese Soup. Omit toppings & add cubed ham & peas to make a wonderful Ham and Cheese Soup. This soup is lovely & is almost impossible to curdle.

Ingredients:
5 or 6 large potatoes
1 12-oz. can evaporated milk
1 lb. Velveeta Cheese, cubed
3/4 tsp Nature's Seasoning
1/2 tsp pepper
3 1/4 tsp chicken base in 2 c. water
Garlic to taste
Steamed broccoli florets, if desired
Garnish:
Sour cream
Bacon bits
Shredded cheese
Green onion tops

Directions:
Wash, peel, cut potatoes in small pieces. In medium size pot, barely cover with water, boil until cooked but still firm. Add evaporated milk & cheese. Cook on low, stirring constantly until cheese melts. Add other ingredients. Do not boil. Ladle into serving bowls, garnish & serve. Serves 10.
