Heaven And Earth Soup

Description: I created this recipe after living in Germany for 3 years. It's based on the German tradition of Himmel und Erde or Heaven and Earth because it's made with apples from the heavens and onions from the earth. Both are grown along the Cedar River in Iowa. Ingredients: 2 lbs. onions, quartered & sliced in food processor 3 15-oz. cans chicken broth 1 lg. can frozen apple juice concentrate, thawed 2 c. apple juice 1/4 c. margarine Dash of white pepper Dash of beef bouillon Heavy splash apfelsaft liquor (apple jack, apple wine) Heavy cream to garnish if desired Apple slices, cored and thinly sliced Directions: Sauté onions in butter until very tender. Add broth, juice, & concentrate. Season to taste. Splash with apfelsaft. Simmer at least 1 hr to blend flavors. Garnish with cream & apple slices after ladled into bowls.
