Cheese Casserole

This recipe is a favorite of our guests and our family. It uses easy to find items that you can keep in the pantry. Great to serve company.

One bag frozen diced (hash brown or O'Brien) potatoes
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 can undiluted Campbell's cheddar cheese soup
1 pound pre-cooked bacon
12 eggs, beaten
2 cups shredded cheddar cheese

Prepare potatoes in buttered skillet until slightly golden
Sprinkle with garlic salt and pepper
Transfer to greased or buttered 9 x 13 pyrex pan
Spread cheese soup evenly over potatoes, using rubber spatula
Set aside 1/2 cup bacon for topping
Sprinkle remaining bacon over soup
Scramble eggs until almost set, but still loose
Smooth over bacon in pan, using spatula
Sprinkle cheese evenly over eggs
Sprinkle 1/2 cup of set-aside bacon over cheese
Allow to set for 5 minutes before slicing into squares
