Chocolate Lover's Muffins

easy,delicious,and a very appealing unique presentation

Fresh strawberries, garnish
Powdered sugar, garnish

1 egg
1/4 cup canola oil
1/4 cup chocolate liqueur(I use a Crème de Cacao.)
1/2 skimpy cup buttermilk(more if needed if batter is too thick)
3/4 cup flour
1/2 cup sugar
1/4 cup baking cocoa
1 1/4 tablespoons baking powder
1/2 cup semi-sweet chocolate chips

In one bowl, whisk egg, oil, chocolate liqueur,& buttermilk. In second bowl, mix flour, sugar, baking cocoa, baking powder, & chocolate chips. Pour the liquids into the dry ingredients.

Spray muffin cups and don't fill cups completely. Bake 350' for 20 min. Cool 5 min. before removing muffins. Shake powdered sugar on top of the muffin. Then serve warm by surrounding the muffin with sliced strawberries. Clean, remove stem & slice the strawberry vertically in half. Lay the slice with the open side up. Place the top or wide end of the strawberry next to the muffin. Your muffin will appear to be bordered with red hearts.
