Herb-Baked Individual Eggs
Description:
Popular egg dish when having single or smaller numbers at breakfast. Unique, easy, & flavorful eggs Ingredients: 4 slices ham(boiled or cooked from a sandwich type pkg.)(vary by choice-turkey ham, vegetarian sausage patties), DIVIDE 6 large eggs 1 tsp. Dijon mustard 1/2 c. plain yogurt 1/4 t. ground nutmeg 1 1/2 c. shredded "Six Cheese Italian Blend",(Mix of Mozzarella, Smoked Provolone, Asiago, Parmesan, Romano, & Fontina), DIVIDE 2 teaspoons herbs(any combo of basil, thyme, chives or parsley), DIVIDE Pepper to taste Salt, optional (ham adds enough salt) Non-stick cooking spray Directions: Preheat oven to 375'. Spray 4 au gratin ramekin style baking dishes with non-stick cooking spray. Stack the 4 ham slices and cut into strips. Keep the layers so you can evenly divide amount to place one slice in each ramekin to line dish. Sprinkle 1/2 teaspoon herbs on top of ham in each dish. Divide cheese evenly between the dishes to spread out as the next layer. In a bowl, beat eggs with the mustard, yogurt, and nutmeg. Gently pour egg mixture into each of the individual dishes. Bake for 15-20 minutes or until eggs are set in center. If you notice that the edges are getting too brown while the center looks un-cooked, then remove from oven and microwave in short increments(20 sec. bursts) until center is set.
