Cranberry Pumpkin Muffins

Wisconsin is one of the top cranberry producing states. This recipe highlights the wonderful flavors of this tart fruit.

2 beaten eggs
2 cups sugar
1/2 cup oil
1 cup pumpkin
Mix well
2 1/4 cup flour
1 Tbl cinnamon
1 tsp ginger
1 tsp nutmeg
1 tsp baking soda
1/2 tsp salt
Add to egg mixture
1 cup chopped fresh cranberries or craisins
Stir into batter
1/4 cup brown sugar
2 tsp cinnamon
Mix together
Spray 12 cup muffin pan, scoop batter evenly into pan. Sprinkle brown sugar mixture on top. Bake at 375* for 20 25 minutes, until golden brown and tester comes out clean.
