Cranberry Pumpkin Muffins

Description:
Wisconsin is one of the top cranberry producing states. This recipe highlights the wonderful flavors of this tart fruit.

Ingredients:
• 2 beaten eggs
• 2 cups sugar
• 1/2 cup oil
• 1 cup pumpkin
• Mix well
• 2 1/4 cup flour
• 1 Tbl cinnamon
• 1 tsp ginger
• 1 tsp nutmeg
• 1 tsp baking soda
• 1/2 tsp salt
• Add to egg mixture
• 1 cup chopped fresh cranberries or craisins
• Stir into batter
• 1/4 cup brown sugar
• 2 tsp cinnamon
• Mix together
Spray 12 cup muffin pan, scoop batter evenly into pan. Sprinkle brown sugar mixture on top. Bake at 375* for 20 – 25 minutes, until golden brown and tester comes out clean.
