Gingerbread Pancakes

Gingerbread Pancakes
Serve with Wisconsin maple syrup and homemade strawberry jam.

4 eggs
2 cups milk
1/2 cup vegetable oil
4 tablespoons brown sugar
4 cups flour
4 tablespoons baking powder
1 tablespoon cinnamon
1 teaspoon salt, ginger and nutmeg

Mix together well first 4 ingredients
In separate bowl, mix remaining dry ingredients.
Add to egg mixture.
Can be mixed the night before.
Spray and heat griddle till hot, put small scoop of batter and cook till brown, flip.
