Description: These nutritious, fiber-filled muffins (made with Stevia instead of sugar) are delicious and will keep you going until after lunchtime. Enjoy them with a large glass of water! Ingredients: 1 1/2 cups unprocessed Miller's Bran 1/2 cup boiling water 1 T Stevia-Plus (buy at health food store) 1/4 cup canola oil 1 1/4 cup flour 1 t. baking soda 1/2 t. salt 1 t. cinnamon 1/2 large unpeeled, diced apple 1/2 cup sliced almonds or chopped pecans 1/2 cup dried cranberries 1 cup peeled, grated carrots 1 egg 1 1/4 cup non-fat buttermilk 1 t. orange extract 1 t. vanilla extract Directions: Preheat oven to 400 degrees. Place all ingredients in large mixer bowl. Mix about two minutes or until thoroughly combined. Spray 12 muffin cups with cooking spray or use paper liners. Fill to the brim with batter. Bake 20 minutes.
