Zucchini & Red Pepper Frittata

A colorful and healthy vegetarian dish.

1 1/2 lbs zucchini, halved & sliced
2 tbsp olive oil
3/4 tsp salt
3/4 tsp pepper
1/2 cup finely chopped red pepper
1/4 cup chopped whole green onion
3/4 cup shredded parmesan
12 eggs
1/4 cup shredded parmesan (for topping)

Saute zucchini in olive oil with salt & pepper for about 3 minutes. Add red pepper & onion and cook another minute until vegetables are tender but not limp. Put in greased pan (9X13 or half-size commercial pan) & sprinkle with cheese. Mix eggs & pour over. Cover & refrigerate overnight. Preheat oven to 325 degrees and bake uncovered 45 minutes. Sprinkle with 1/4 cup parmesan and return to oven to melt.
